This week our video recipe comes from Anirudh Arora, head chef at Moti Mahal in Covent Garden. The one time personal chef to the prime minister of India shows us how to make a delicious spicy vegetarian dish of Baked Filo Parcels of Paneer, mushrooms and spinach.

Ingredients:

08 sheets Fillo pastry
200gm baby spinach
100gm Paneer (grated)
100gm Chopped button mushrooms
To taste Salt
05 gm cumin powder
10 gm Garam masala
20ml Oil
3gm Chilli powder
60gm Butter
100gm chopped deseed tomatoes

Method:

In a pan heat oil and and 20gm of butter, add the mushroom and sauté
Add tomatoes and sweat together, add the spices
Add baby spinach and paneer and cook for about a minute
Cool the mixture till it reaches room temperature
Spread the fillo pastry(two sheets) and make square parcels with the stuffing
Apply melted butter to seal and on top, bake till golden brown in colour
Serve with tossed cherry tomatoes
